Angel food cake’s main requisites are that it be tender and soft—we call it “pillow cake” here at CHOW. This version not only is ethereally airy, but also has a welcome hint of citrus. Serve it with orange-soaked strawberries for a dainty dessert. Use the leftover yolks for more indulgent desserts.

Special equipment: You’ll need a 10-inch tube pan with a removable bottom to make this recipe.

Game plan: The cake can be made a day in advance—leave it in the pan, cover it, and store it at room temperature for up to 24 hours. The strawberries can be prepared up to 1 hour ahead.

Instructions
For the cake:

    1Heat the oven to 325°F and arrange a rack in the middle. Mix 1 cup of the sugar with the orange zest in a small bowl until evenly combined; set aside.
    2Sift the cake flour through a fine mesh strainer 3 times onto a piece of parchment paper or into a large bowl. Then sift again with the remaining 1/2 cup sugar; set aside.
    3Place the egg whites in the bowl of a stand mixer fitted with a whisk attachment. (Be sure the bowl and whisk have been thoroughly cleaned.) Beat on high until just frothy, about 1 minute. Add the cream of tartar, orange juice, and salt and beat until the whites just begin to form soft, droopy peaks, about 2 minutes. Add the sugar-zest mixture 2 tablespoons at a time, letting it mix in before adding more, then beat until the whites are glossy and the peaks are droopy but hold onto a spatula, about 2 to 3 minutes more.
    4Remove the bowl from the mixer and sift a quarter of the cake flour mixture over the whites. Gently fold the dry ingredients into the whites with a rubber spatula. Continue to sift and fold in the remaining cake flour mixture, a quarter at a time, until all of it has been added.
    5Spoon the batter into a clean, dry 10-inch tube pan with a removable bottom. Tap the pan twice on the counter to burst any large air bubbles in the batter. Transfer to the oven and bake until the cake is springy to the touch and a wooden skewer inserted into the center comes out clean, about 35 to 40 minutes.
    6Invert the pan over the neck of a bottle (the cake should be hanging upside down—this keeps it from collapsing/deflating) until completely cooled, about 1 1/2 hours.

For the berries:

    1In a large bowl, combine the strawberries, orange juice, and sugar. Place in the refrigerator and let sit, stirring occasionally, until the sugar has dissolved and the strawberries have let off some juice, at least 15 minutes or up to 1 hour.

To remove and serve the cake:

    1Cut around the perimeter of the pan with a knife, remove the base, and cut around the tube and the base to release the cake completely. Slice with a serrated knife and serve with the soaked strawberries and their juices.

A chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings. It is a combination of both batter and foam type (sponge type) cakes.

Instead of the traditional cake ingredient butter, vegetable oil is used; but this is difficult to beat enough air into. Therefore chiffon cakes, like angel cakes and other foam cakes, achieve a fluffy texture by beating egg whites until stiff and folding them into the cake batter before baking. Its aeration properties rely on both the quality of the meringue and the chemical leaveners. Its oil-based batter is initially blended before folding into the meringue.
The high oil and egg content creates a very moist cake, and as oil is liquid even at cooler temperatures, chiffon cakes do not tend to harden or dry out as traditional butter cakes might. This makes them better-suited than many cakes to filling or frosting with ingredients that need to be refrigerated or frozen, such as pastry cream or ice cream. Chiffon cakes tend to be lower in saturated fat than butter cakes, potentially making them healthier than their butter-heavy counterparts. The lack of butter, however, means that chiffon cakes lack much of the rich flavor of butter cakes, and hence they are typically served accompanied with flavorful sauces or other accompaniments, such as chocolate or fruit fillings.
The chiffon cake was invented in 1927 by Harry Baker, a California insurance salesman turned caterer. Baker kept the recipe secret for 20 years until he sold it to General Mills. At this point the name was changed to "chiffon cake" and a set of 14 recipes and variations was released to the public in a Betty Crocker pamphlet published in 1948.

"This is a very versatile and fast cake recipe. Not only is it moist and delicious, the same batter can be used to make banana bread and muffins. Delicious frosted with chocolate or cream cheese frosting."

Directions

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, baking soda and salt; set aside.
    In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.
    Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.

For a handheld treat that takes the cake, try these cute confections -- they combine the flavor of classic banana bread with a creamy spiced frosting.
Preheat oven to 350 degrees. Line a standard 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Make a well in center of flour mixture. In well, mix together butter, mashed bananas, eggs, and vanilla. Stir to incorporate flour mixture (do not overmix). Dividing evenly, spoon batter into muffin cups.

Bake until a toothpick inserted in center of a cupcake comes out clean, 25 to 30 minutes. Remove cupcakes from pan; cool completely on a wire rack. Spread tops with Honey-Cinnamon Frosting. Just before serving, peel and slice banana into rounds, and place one on each cupcake, if desired.

Made these for our daughter's 4th birthday (as she requested strawberry banana cupcakes) with a strawberry cream cheese frosting! Yum. They were a hit! Everyone liked them. Lots like a moist banana bread ~ but that's okay with us.I had left a review a while ago but it mysteriously disappeared. I made these a while ago and they were wonderful! I only had enough bananas to make one cup, so I decided to reduce the flour to 1 cup, as well. They turned out fluffy and tender and my kids loved them! I didn't like the frosting by itself but I loved how it tasted with the banana cupcake.

This cake reminds me of my nan, and also of some of the older customers who used to come into my parents' pub. The old dears would come up to the bar and ask for a half pint of Guinness for themselves and a St Clement's for the wife, which is a simple orange juice and lemonade combo. It's named after that nursery rhyme we all grew up singing, which I've realized is actually quite a sinister song about owing people money and chopping off heads! But putting that aside, this cake is as sweet and lovely as you'd want it to be. The icing that seeps into the sponge adds flavour, and once the top layer firms up it becomes a sherbety, citrusy delight. If you really smother the cake well, it will help to keep it nice and moist for quite some time. This recipe also makes the sweetest little cupcakes.

Preheat your oven to 180°C/350°F/gas 4. Grease a 20cm loose-bottomed springform cake tin with a knob of butter, then line the base with greaseproof paper. Beat the softened butter with 125g of the caster sugar until it's light and creamy, then crack in the eggs, one at a time, beating each one in well before adding the next. Finely grate in most of the orange zest, keeping back a few scrapings of the zest in a clingfilm-covered bowl. Fold in the ground almonds and sift in the flour. Mix and gently combine everything, then spoon the cake batter into your prepared tin and bake in the oven for about 30 minutes, or until risen and lightly golden. To check that the cake is cooked through, poke a skewer or cocktail stick into the centre of the sponge. If it comes out clean, it's done; if not, cook it for a few more minutes. Leave to cool for a few minutes in the tin while you make the orange syrup.

Put the remaining 100g of caster sugar into a pan and add the juice of the zested orange. Place the pan on a medium heat for a few minutes, or until the sugar has dissolved. While the cake is still hot, poke lots of little holes in the top with a cocktail stick and pour the syrup all over it. Once all the syrup has been absorbed, move the cake to a wire rack to cool completely.

To make the icing, sift the icing sugar into a bowl and grate in most of the lemon zest. Keep back a few gratings, add them to the bowl of reserved orange zest, and cover again with clingfilm. Squeeze the lemon juice over the icing sugar and mix, adding more juice if needed until you get a good drizzling consistency. Keep aside until the cake has completely cooled, then transfer it to a serving plate and pour that lemony icing all over the top, letting it drizzle down the sides. Sprinkle over the reserved
orange and lemon zest, and serve.
